
He had great success in London as Chef at Darby’s (and before that at Sorella and The Dairy), but now Dean Parker is leaving London – just outside London, for Glasgow. He and his wife Anna, a native of Glasgow, will open their first solo restaurant, Celentano’s, in August.
It will be in Glasgow’s Cathedral House and will carry on the couple’s love for Italian food with a huge focus on low-waste cuisine.
And this menu sounds pretty darn good – here’s a taste (and expect that to change seasonally):
- Celentano’s homemade sourdough with Le Ferre extra virgin olive oil & chicken liver mousse
- Homemade pork and fennel salami with pickles
- Smoked Cod Donuts
- Agnolotti with ricotta, kohlrabi, artichoke and pomelo
- Parpadelle with beef ragout made from locally raised meat and pecorino cheese
- Free Company beets with muscat grapes, pine nuts and garden herbs
- Affogato with malted barley and chocolate
- Almond cake with reduced milk ice cream
You will also have larger dishes to share, including whole fish served on the bone.
For drinks, you can order Negronis with homemade vermouth in addition to biodynamic and natural wines in small quantities and beer from the local brewery Brewgooder.
The restaurant itself offers 32 seats inside, 40 more in the covered garden and a large private dining room with 50 seats. What about that name? There is “a song that apparently accompanied the couple through their Italian honeymoon”.
